The earliest Christmas cookies in America came with the Dutch (inventors of the cookie) back in the 1600&aposs.  In 1796, American Cookery, written by Amelia Simmons (considered by food historians as the first American cookbook) described making rolled and cut sugar cookies, called Christmas Cookeys, but it wasn&apost until the 1930&aposs when shaped cookie cutters became made of tin that the Christmas-cookie explosion formally started.<br />

The position has never been filled in Delaware, and many politicians have long forgotten its existence, but Bella&aposs young, energetic, "clean-themed" agenda has quickly revived its "crumbly" past.<br />

It was around the dinner table with only her family present, that Bella announced her candidacy.  Holding her own "Champion Chunk" cookie in one hand, she expressed the need for the people, especially children to settle for nothing less, than excellence, in cookies.  Invented in Denmark, and popularized through Ruth Wakefield and her famous recipe at the Toll House Bed & Breakfast, the cookie… is an American favorite. Recently, a low-fat vegan diet was shown to reduce the need to take medications for type 2 diabetes and also showed to help overweight individuals loose more weight and lower overall cholesterol. <br />

“Vegan Breakfast Cookies” from Bella&aposs Cookies in Milton are quickly disappearing from the stores and markets in which they&aposre found.  “We can’t keep them in stock,” said Krissy Clary (General Manager of Java Beach in Lewes).  Created as a healthy meal replacement for Kelly and Mark Leishear&aposs children on their way to pre-school, the two were confident in the future response from the public as Bella&aposs Cookies began distributing their all natural and organic creations this past May.  "Kelly wanted to create a cookie that was packed full of ingredients that were really good for your body, something you could eat and have it stay with you a while, and she wanted to create it without using any egg or dairy," said Mark Leishear (Director of Sales & Marketing).  The vegan diet is plant-based and consists of vegetables, fruits, grains, and legumes and avoids animal products, such as meat and dairy.  <br />

Earlier this month, the results of a low-fat vegan diet study were released and the diet was shown to be very beneficial to those suffering from type 2 diabetes.  Compared with subjects who followed the ADA (American Diabetes Association) diet on reducing the need for drugs to manage diabetes, kidney function, cholesterol levels, and weight loss, the low-fat vegan diet showed significant advantages.  43% of those on the vegan diet reduced their need to take drugs to mange their diabetes compared with 26% of the ADA diet.  Weight loss from the vegan diet was more than double from the ADA diet, LDL "bad" cholesterol dropped by more than double, and blood sugar control also improved more significantly.  <br />
<br />
To the excitement of their cookie fans throughout the area, Bella&aposs Cookies recently introduced its second vegan breakfast cookie, "Fruit Melody."  Described as a "dried apricot, apple, raisin, granola, and oat cookie with applesauce," each cookie packs 8 grams of protein, 5 grams of fiber, has 290 calories and 1.5 grams of saturated fat.  The cookie is made with a vegan butter, which is made from a mixture of expeller pressed canola oil & palm fruit oil.  "I’m always asked about our vegan cookies” said Leishear “people want to know about the butter, what we use in place of the eggs, or they just want to thank us or compliment us on turning out our products… it’s very rewarding to know that something we created in our kitchen… from scratch can have such a positive effect on people’s eating habits.”          <br />

The vegan diet represents a major change from current diets, mainly because there are no limits on calories, carbohydrates, and portions.  That being said, the vegan diet might be easier for traditional dieters to follow. "It&aposs one of those classic flavors you just don&apost find anymore," said Mark Leishear (Director of Sales & Marketing for Bella&aposs Cookies) "Kelly’s made a rum raisin cookie for a long time, and everyone always comments on how you can&apost find that flavor anywhere."  Bella&aposs approached Sam Calagione of Dogfish Head Craft Brewery about the idea, specifically utilizing the rum Dogfish Head distills at their downtown Rehoboth Beach location.  Of the two varieties available, the Brown Honey Rum was found to be the best fit for the cookie.  "It&aposs the smoothest rum I&aposve ever tasted," said Leishear "and because the rum is made using only all natural ingredients, it fit our ingredient specifications perfectly."  The Brown Honey Rum is a twice distilled handcrafted rum settled on American oak with wildflower honey.  Recently, Wine Enthusiast magazine rated the rum as an 89 (Very Good) saying "the first whiffs find smells of honey, the palate entry is honey sweet; in mid-palate stage tastes of resin balance the honey sweetness." One of Bella’s trademarks is a creative story written to go alongside the tag of their cookies.  "It gives each cookie an identity," said Leishear.  The Rumazin story is about a pirate with a big sweet tooth; he issues a challenge to everyone to win him over and take is treasure.  The tag itself pictures Sam Calagione and Bella Leishear together dressed in pirate and peasant attire.  "Sam was great to work with," said Leishear "we bought the Capt. Jack Sparrow costume from the Pirates of the Caribbean movie and he made a great pirate; we took Bella over to Milton a few times to get her used to him without the costume, so when the day of the photo shoot came she was completely comfortable."<br />

The rum inside Bella&aposs "Rumazin" cookie completely cooks out during the baking process, leaving only the flavor of the rum behind.
